Every loaf begins with Boulangerie Christophe's prized wild yeast starter (levain) — a living culture that has been carefully maintained and fed daily for many years. The dough is hand-mixed, then left to undergo a 24 to 48-hour cold fermentation. This slow, patient process allows the wild yeasts and natural bacteria to develop a rich, complex flavor profile and an open, irregular crumb structure that simply cannot be achieved with commercial yeast.
Hand-Shaped & Stone-Baked
After fermentation, the raisins are gently folded in by hand to preserve their integrity, and each loaf is hand-shaped by Christophe's skilled bakers. Scored and loaded into a stone-hearth deck oven, the intense heat creates a deeply caramelized, crackling crust while keeping the interior soft, moist, and studded with sweet raisins throughout.
