The Chocolate Almond Sponge
The base of the Palais Royal is a moelleux au chocolat — a moist, tender chocolate sponge made with 70% dark chocolate, almond flour, whole eggs, and a touch of flour. It bakes to a deep, fudgy crumb that absorbs the ganache beautifully and provides a firm, flavorful foundation for the mousse layers above.
The Dark Chocolate Ganache
A pure 70% dark chocolate ganache — heavy cream heated and poured over finely chopped dark chocolate, emulsified until perfectly smooth and glossy. Spread in an even layer over the sponge, it sets to a dense, fudgy consistency that adds richness and depth to every slice.
The Chocolate Mousse
Light, airy, and intensely chocolatey — Christophe's mousse is made by folding 70% dark chocolate ganache into freshly whipped cream until just combined, creating a texture that is simultaneously rich and ethereally light. It sets firm enough to slice cleanly while melting instantly on the palate.
The Glaze & Decoration
