Mille-feuille — literally "a thousand leaves" — is one of the great achievements of French pâtisserie, and Boulangerie Christophe's version is exceptional. Three layers of shatteringly crisp, caramelized puff pastry are sandwiched with generous layers of fresh vanilla pastry cream, then finished with a smooth white fondant glaze decorated with Christophe's signature dark chocolate feathering — the elegant chevron pattern that has defined the classic mille-feuille for over a century.
Every element is made fresh daily. Every layer is perfectly balanced. This is French pastry at its most iconic.
The Puff Pastry
Christophe makes his puff pastry using the classic détrempe and beurrage method — a lean dough folded repeatedly around a block of European-style butter to create hundreds of distinct, paper-thin layers. The pastry is rested between each fold to relax the gluten and keep the butter cold, then baked at high heat until the layers separate dramatically, puff to full height, and caramelize to a deep, even golden brown.
The result is pastry that shatters audibly when you press a fork through it — the defining textural experience of a great mille-feuille.
The Vanilla Pastry Cream
A classic crème pâtissière — whole milk, fresh egg yolks, sugar, flour, and the seeds of a whole Madagascar vanilla bean, cooked until thick and smooth, then chilled and beaten until silky. Christophe pipes it generously between each layer of pastry — thick enough to hold its shape when sliced, soft enough to melt on the palate.
The Fondant & Feathering
The top of the mille-feuille is finished with a smooth white fondant glaze, spread in a single even pass while still warm. Before it sets, Christophe pipes thin lines of dark chocolate across the surface and drags a toothpick through them in alternating directions — creating the classic chevron feathering pattern that is as much a signature of the mille-feuille as the pastry itself.

Best enjoyed the day of purchase — the pastry is at its crispest within a few hours of assembly. To serve, use a sharp serrated knife and a single confident cut to avoid compressing the layers. Pairs beautifully with a café au lait, a glass of Champagne, or a cup of Earl Grey tea.
