Season well, sear on all sides until deeply browned, then braise in red wine, stock, and aromatics at 325°F for 2.5–3 hours until the meat falls from the bone. The braising liquid reduces into a rich, glossy sauce that needs nothing more than a spoonful over creamy polenta, mashed potatoes, or buttered egg noodles. A dish worth every minute of the wait.
