Brown in batches over high heat to build a deep crust, then braise low and slow in red wine, stock, and aromatics until fall-apart tender. Thread onto skewers with onion and peppers for grilled kebabs, or simmer into a Moroccan-spiced tagine with dried fruit and warm spices. The shoulder fat renders beautifully — don't trim it. Excellent with couscous, flatbread, or roasted root vegetables.
