The Art of Slow Fermentation
Every loaf begins with Boulangerie Christophe's prized wild yeast starter (levain) — a living culture that has been carefully maintained and fed daily for many years. The dough is hand-mixed, then left to undergo a 24 to 48-hour cold fermentation. This slow, patient process allows the wild yeasts and natural bacteria to develop a rich, complex flavor profile and an open, irregular crumb structure that simply cannot be achieved with commercial yeast.
Hand-Folded & Stone-Baked
After fermentation, the figs and toasted walnuts are gently hand-folded into the dough to preserve their texture and distribution. Each loaf is then hand-shaped, scored, and loaded into a stone-hearth deck oven. The intense heat creates a deeply caramelized, crackling crust while keeping the interior soft, moist, and richly studded with fruit and nuts.
