Trim any excess fat, season well, and sear quickly in a very hot pan with butter and garlic — 2–3 minutes is all they need. Also excellent skewered and grilled, or slow-braised in a rich sauce. Their small size means they cook fast and absorb marinades beautifully. A favorite in Brazilian churrasco and Japanese yakitori traditions.
